Wild Tapas with Pascal Baudar + Jess Starwood

Experience 10 courses of truly unique wild foods, reflecting authentic local Southern California cuisine, in a tapas style presentation with forager and culinary artist Pascal Baudar and herbalist, forager and chef Jess Starwood.

Dishes will incorporate fresh and fermented delicacies with unusual seasonal ingredients found from the local environment. Wildcrafted Herbal beverages and wine/beer pairings included.

Pascal is exploring the culinary uses of "invasive" plants, prehistoric grains and how a wild cuisine can be beneficial to the environment. These concepts will prevail throughout the course of the meal.

Pascal Baudar is a writer, naturalist and a self-styled “culinary alchemist” based in Los Angeles. His passion is to study wild edibles and research new culinary uses through ancient and traditional methods of food preservation as well as contemporary cooking techniques.

He is the author of 3 books - The New Wildcrafted Cuisine, The Wildcrafting Brewer and Wildcrafted Fermentation (available at the end of 2019). Both published books became amazon bestsellers in several categories.

His next project is related to using wildcrafting and art as tools to explore environmental issues by focusing on invasive and noxious plants with the concept of making food part of the solutions being offered

Jess Starwood is an herbalist, forager and chef. She is the founder of SunRaven Apothecary and leads educational classes and workshops on herbalism and wild food. She professionally forages wild ingredients for two Michelin star restaurants in Los Angeles.
